SALAD STUFFED IN A PITA
Garlic PIta Chips
INGREDIENTS

Chopped tomatoes, cucumbers

Shredded lettuce

Slice onions (thin)

Sliced green peppers

Crumbled feta cheese

Hollowed olives

tablespoon extra virgin olive oil

½ tablespoon lemon juice

A pinch of sea salt and black pepper

4 tablespoons hummus

2 whole grain pita breads (halved),

and opened into pockets


- Start by cutting your pita in half and opening the pockets so that you can stuff them.

- Drizzle your favourite dressing into the pockets.

- MIX together all the ingredients, except the hummus and bread, in a bowl until well combined.

- SPREAD 2 tablespoons of hummus inside each pita and fill with equal amounts of the filling to serve.
